Feta cheese and herb soufflé

Ingredients for 3 servings:

  • 300 g sheep’s cheese
  • 200 g low-fat curd cheese
  • 3 eggs
  • 50 g whole wheat flour
  • 2 tbsp dill
  • some basil
  • some oregano
  • 1 tbsp parsley
  • 1 garlic clove(s)
  • some black pepper, freshly ground
  • e.g. chives
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

great as a side dish or simply as a main course

Combine feta cheese, low-fat quark, eggs, flour, herbs, spices, and the crushed garlic clove with a hand mixer. Pour into a greased casserole dish and bake for about 25 minutes at 200°C (400°F) top/bottom heat. You can vary the herbs. If you like garlic, you can use even more.
