Herb butter – potatoes

Ingredients for 2 servings:

  • 6 large potatoes
  • some oil
  • herb butter
  • salt and pepper
  • possibly herbs, fresh

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes in their skins, peel them, let them cool, and then dice them. Heat a little oil in a pan and add the herb butter. Once the butter has melted, add the diced potatoes to the pan and reduce the heat slightly. Season with salt and pepper, and add chopped fresh herbs to taste. Delicious as a side dish, but also as a main course with buttermilk.
