Ingredients for 4 servings:

  • 250 g wheat flour
  • 100 g rye flour
  • 1 kg potatoes
  • salt and pepper
  • 2 eggs
  • Oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Boil the potatoes, peel them, and press them through a potato ricer while still hot. Knead them with the remaining ingredients until a smooth dough forms. Add more flour if necessary if the dough still sticks to your fingers. Let the dough rest in the refrigerator for 1/2 hour. Divide the dough into equal portions and roll out thinly with a rolling pin. Lightly oil a large pan and fry the potato dough flatbreads one at a time until crispy and lightly browned. Serve the finished Feuerflecken immediately with a delicious chive sauce.
