Grandma's potato noodles

Ingredients for 6 servings:

  • 750 g potatoes, floury
  • 130 g flour
  • 1 egg(s)
  • 2 tsp salt
  • Fat, for the pan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes, peel them while still lukewarm, and press them through a potato ricer. Knead the remaining ingredients with the potatoes into a firm dough. Form “noodles” about 6 cm long and 1 cm thick and fry them in a pan with fat until golden brown. As a variation, you can also knead various herbs (e.g., parsley, chives, paprika, etc.) into the dough. They also taste great as a side dish with applesauce. It was my favorite dish at my grandma’s and is an absolute favorite of my son. The dough holds up best with “old” potatoes.
