Ingredients for 2 servings:
- 2 tomatoes
- 1 shallot(s)
- ½ pack of feta cheese
- 6 eggs
- salt and pepper
- possibly paprika powder
- 4 tbsp mineral water
- 2 tbsp oil
- some parsley or basil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the tomatoes and slice them thinly, peel and finely dice the shallot, and cut the feta into approximately 1 cm cubes. Whisk the eggs with salt, pepper, paprika, and mineral water. Heat oil in a nonstick pan. Sauté the shallots until translucent. Pour in the eggs, top with tomato slices, scatter the feta pieces on top, and let the eggs set. Serve the omelet garnished with parsley or basil. Tip: The omelet will set faster if you briefly place the pan in the oven with top heat; this will soften the feta.
