Ingredients for 2 servings:
- 1 large cucumber(s)
- 200 g goat’s cheese
- 4 tbsp olive oil
- ½ bunch chives
- 2 tbsp unsalted, shelled pistachios
- Sea salt
- Pepper, black from the mill

Partially peel the cucumber. Use a vegetable peeler to cut strips all the way around, rotating the cucumber repeatedly until only the core remains. Arrange the cucumber strips overlapping on a sheet of plastic wrap. Mix the goat’s cheese with the olive oil and the finely chopped chives. Season with salt and pepper. If the cheese is too moist, let it drain first. Place the cheese mixture on the surface, leaving some space between the edges, across the entire width like a “sausage.” Using the plastic wrap, wrap the cucumber strips around it to form a roll. Refrigerate for a while. Divide this roll into two portions for an appetizer or cut into thick slices for finger food. Chop the pistachios and garnish the roll with them and chives.
