Quick minestrone

Ingredients for 4 servings:

  • 1 can/n beans, white
  • 2 potatoes
  • 300 g soup vegetables, frozen
  • 1 liter vegetable broth
  • 1 bay leaf
  • Iodized salt
  • pepper
  • 2 tomatoes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the white beans. Wash, peel, and dice the potatoes. Place the frozen vegetables, still thawed, into a soup pot. Add the potatoes, beans, and broth. Season with bay leaf, salt, and pepper. Bring to a boil, then cover and simmer over medium heat for about 15 minutes. Meanwhile, wash and finely dice the tomatoes, removing the stems. Stir the diced tomatoes into the soup. Season the minestrone soup with salt and pepper and serve in deep bowls.
