Tomato omelet with fresh herbs

Ingredients for 2 servings:

  • 1 tbsp oil
  • 6 small tomatoes
  • 6 eggs
  • 100 ml milk
  • salt and pepper
  • 3 stalks of basil
  • ¼ bunch chives
  • 1 tbsp sour cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat oil in a nonstick pan. Wash and halve the tomatoes, then fry them cut-side down. Whisk the eggs and milk together, season generously with salt and pepper. Wash the herbs and cut them into fine strips or rolls, except for some basil for garnish. Stir into the egg mixture. Pour the egg mixture evenly over the tomatoes and let it set, covered, over low heat for about 12 minutes. Slide the omelet onto a flat lid, invert the pan over the tomatoes, turn over, and cook for another 3 minutes. Serve with sour cream and basil. Serve with bread.
