Ingredients for 4 servings:

  • 8 m.-sized jacket potatoes
  • 1 bunch of spring onions
  • some butter
  • 2 cups buttermilk
  • salt and pepper
  • Herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

making a lot out of a little

Boil the potatoes with their skins on. Slice the spring onions and sauté them briefly in the butter. Meanwhile, pour the buttermilk into a bowl and season with salt, pepper, and the herbs. Peel the boiled potatoes, quarter them, and divide them among the plates. Serve the spring onions and buttermilk on top. We like to serve this with some cucumber or carrot salad.
