Ginger – carrots with honey

Ingredients for 2 servings:

  • 300 g carrot(s)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 piece(s) ginger, 2-3 cm
  • 1 tbsp honey, liquid
  • 1 half lime(s)
  • some coriander, ground
  • 50 ml vegetable stock
  • 50 ml apple juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

as a side dish to fish or vegetarian patties

Peel, wash, and slice the carrots. Melt the butter in a pan and add the olive oil. Add the carrots to the pan. Finely grate the ginger and add it to the pan with the honey, lime juice, and a pinch of coriander. Stir for 2 minutes, then deglaze with the hot stock. Let it simmer over low heat until cooked through, adding a little more apple juice every now and then until the carrots reach the desired consistency. Delicious with fried or steamed fish or vegetarian patties.
