Double-fried Cauliflower with Mashed Sweet Potatoes
The perfect double-fried cauliflower with mashed sweet potatoes recipe with a picture and simple step-by-step instructions.
Double fried cauliflower:
- 1 Cauliflower / cleaned and divided into florets approx. 1 kg
- 2 tsp Salt
- 500 g Tempura flour (from the Asia shop!)
- 700 ml Water
- 1 tsp Mild curry powder
- 1 tsp Turmeric
- 1 tsp Salt
- 500 ml Peanut oil
Mashed sweet potatoes: (For 3 people!)
- 500 g Sweet potatoes
- 1 tsp Salt
- 1 tbsp Butter
- 1 tbsp Creme fraiche Cheese
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
Serve:
- Vine tomatoes for garnish
Double fried cauliflower:
- Mix tempura flour (500 g) with water (700 ml), mild curry powder (1 teaspoon), turmeric (1 teaspoon) and salt (1 teaspoon). Boil / blanch the cauliflower florets in salted water (2 teaspoons of salt) for about 3 – 4 minutes, drain through a kitchen sieve and drain well. Put the cauliflower florets in the breading and stir carefully. Heat the peanut oil (500 ml) in the wok and gradually add the cauliflower florets turned in the tempura batter to the hot peanut oil and deep-fry until golden-yellow. Place the drainage grid on the wok to drain. Continue until all the cauliflower florets are golden-yellow. Now gradually fry all the golden-yellow baked cauliflower florets again until they are golden-brown and crispy and keep them warm in the oven at 50 ° C until serving.
Mashed sweet potatoes: (For 3 people!)
- Peel and dice sweet potatoes, cook in salted water (1 teaspoon salt) for about 17 – 18 minutes, drain through a kitchen sieve, add to the hot saucepan and stir with butter (1 tablespoon), crème fraîche (1 tablespoon), coarse Work / pound through the sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches) with the potato masher.
