Roasted Cauliflower with Mashed Sweet Potatoes
The perfect roasted cauliflower with mashed sweet potatoes recipe with a picture and simple step-by-step instructions.
for the cauliflower:
- 0,5 head Cauliflower
- 1 tbsp Clarified butter
- 125 ml Vegetable broth, homemade
- 1 pinch Salt
for the mashed sweet potatoes:
- 3 size Sweet potatoes
- 0,5 l Vegetable broth, homemade
- Salt
- 1 tbsp Butter
- Nutmeg
- Milk (amount as required)
- 3 Branches Thyme
- Cut the cleaned and washed cauliflower into 1 cm thick slices
- Heat the clarified butter and fry the cauliflower in it and sprinkle a pinch of salt over it. add the vegetable stock and let the cauliflower simmer in it for about 5 minutes. it should still be firm to the bite
- Peel, wash and cut the sweet potatoes into small pieces
- Bring to a boil in a pot with vegetable stock and cook until soft
- Wash the thyme, shake dry and pluck the leaves from the stems
- Drain the soft potatoes, mash with butter and nutmeg
- Mix in the thyme leaves with milk – amount as required – and season with salt
- Serve with the cauliflower on plates …… there was also small schnitzel with panko breading
