Ingredients for 6 servings:

  • 2 cans of kidney beans, 425 ml
  • 1 can/n beans, white
  • 1 can of corn
  • 1 can/n peas
  • 1 onion(s)
  • ½ bell pepper(s), green
  • ½ red bell pepper(s)
  • Cucumber(s), sour, as desired
  • Tomato(s), as desired
  • possibly olives, black, as desired
  • Vinegar
  • oil
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pour the kidney beans into a sieve and rinse. Then place the kidney beans in a bowl with the white beans, corn, and peas and toss to combine. Add black olives, if desired. Slice the onion into half rings and add to the bowl. Dice the red and green peppers and add to the bowl. Dice pickles and tomatoes, if desired, and add to the bowl. Toss everything together again and season with vinegar, oil, salt, and pepper.
