Vegetable oat patties

Ingredients for 4 servings:

  • 200 g oat flakes
  • ½ large onion(s), diced
  • 400 g vegetables of your choice and season
  • 5 tbsp vegetable oil, non-hydrogenated
  • 4 eggs
  • 4 tbsp fresh, mixed, chopped herbs (e.g. marjoram, basil, lovage, parsley)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Sauté the diced onions in 2 tablespoons of heated vegetable oil until translucent. Wash or peel the vegetables (e.g., cauliflower, carrots, leeks, chard, bell peppers, celery, white cabbage, savoy cabbage, zucchini, etc.) and cut into fine strips or pieces. Add them, steam until semi-soft, and then let cool. Mix the vegetables with the oatmeal, eggs, and finely chopped herbs, and season with salt and pepper. Scoop patties from the mixture (using a large tablespoon) or form them with your hands and fry them in batches on both sides in the remaining hot vegetable oil until golden brown. Serve with a delicious herb curd and salad.
