Ingredients for 4 servings:
- 2 carrots
- 1 m.-sized zucchini, approx. 20 – 25 cm
- 1 onion(s)
- 150 g sunflower seeds
- 4 tbsp olive oil
- salt and pepper
- 1 tsp oregano
- 3 eggs
- 150 g breadcrumbs

Vegetable patty with carrots, zucchini and sunflower seeds
First, clean the zucchini and carrots, then grate them into thin strips. Peel the onion and finely dice them. Lightly roast the sunflower seeds in a pan without fat and place them in a bowl. Add the onions to the pan and fry with 2 tablespoons of olive oil. Add the grated vegetables and sauté for 5 minutes. Add everything to the bowl with the seeds and season with the herbs, salt, and pepper. Mix in the eggs and breadcrumbs, form into discs, and fry everything in the remaining 2 tablespoons of olive oil. The discs also make great vegetable burgers for buffets or children’s birthday parties.
