Mushroom schnitzel

Ingredients for 1 servings:

  • 200 g mushrooms, small white
  • 180 g oat flakes or millet flakes
  • some flour
  • 2 eggs
  • 1 tbsp butter or olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the mushrooms and chop them into small cubes (about the size of a small fingernail). Mix one egg with the mushrooms in a bowl and gradually add about 120g of millet flakes or oats. Stir until everything forms a workable mass. Season with salt and pepper. Heat butter or oil in a pan and use your hands to form small cutlets from the mushroom mixture. Fry briefly on both sides and remove from the pan. Beat the other egg with a fork in a deep plate, put flour on a shallow plate and the remaining millet or oats on another plate. Dip the mushroom cutlets in the egg, then in the flour and then in the flakes and fry in the pan until crispy and golden brown. Serve with rice, pasta or couscous.
