Ingredients for 2 servings:
- 2 small onions
- 100 g mushrooms
- 100 g red bell pepper(s)
- 100 g sour cream
- 2 tbsp tomato paste
- ½ liter vegetable broth
- salt and pepper
- Thyme
- rosemary
- 180 g cod fillet(s)
- 5 drops of lemon-flavored olive oil
- n. B. Sweetener, a few dashes

Peel the onion and slice into rings, then layer them in a baking dish. Clean and slice the mushrooms and place them on top of the onions. Cut the bell pepper into thin strips and place them on top of the mushrooms. Season the cod with salt and pepper and rub with olive oil, then place it on top of the vegetables. Boil the broth, add tomato paste, sour cream, thyme, and rosemary, and bring to a boil briefly. If desired, add a few dashes of sweetener. Pour over the fish and vegetables. Cover the baking dish with aluminum foil and bake at 200°C for about 35 minutes. If you like, you can reduce the sauce, but I’m a sauce fan. Serve with rice or potatoes.
