Ingredients for 4 servings:
- 1 kg salmon fillet(s)
- 5 tomatoes
- 3 cloves garlic
- ½ bunch basil
- 2 small onions
- Pepper, freshly ground (black and white)
- Salt
- olive oil
- 1 lemon(s), the juice
- 2 cups crème fraîche (optionally with herbs)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Cut the salmon into 4 equal pieces. Drizzle with olive oil and lemon juice. Season with salt and pepper. Slice the onions into rings and blanch briefly, peel and dice the tomatoes, and chop the garlic into small cubes or thin slices. Tear the basil. Place the fish in portions on aluminum foil and scatter the onions, tomatoes, garlic, and basil over the fillet pieces. Loosely seal the foil and place the parcels in a preheated oven at 200°C for a good 30 minutes. To serve, open the foil slightly and generously spread crème fraîche over the steaming vegetables. Serve with baguette on its own or with aioli.
