Matjes tartar as an amuse gueule

Ingredients for 10 servings:

  • 8 fish fillets (matjes herring)
  • ½ onion(s) (vegetable onion)
  • 4 radishes
  • 4 small cucumbers (sweet and sour pickled)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the herring fillets into thin strips, then finely dice them. Dice the onion, cucumber, and radishes into tiny cubes. Place everything in a sufficiently large bowl and mix well. Let it sit for about half an hour. Spread the tartar generously on slices of pumpernickel or whole-grain bread and serve as a starter (or while standing). Instead of bread, you can also use small, freshly fried potato pancakes. Place the tartar next to the bread.
