Ingredients for 4 servings:
- 250 g zucchini
- 1 shallot(s)
- 1 garlic clove(s)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp mustard, medium hot
- 50 g cream
- 1 bell pepper(s), yellow
- 1 carrot(s)
- 2 beefsteak tomatoes
- 2 tbsp chives, cut into rolls
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Chop the shallots and garlic and sauté in oil. Let cool, then toss with lemon juice, mustard, and cream. Halve the zucchini lengthwise and cut into 1/2 cm thick slices. Cut the bell pepper into even diamond-shaped pieces and the carrots into thin slices. Cut the tomatoes into eighths. Gently toss the vegetables, pour the dressing over them, and sprinkle with chives.
