Spicy pasta salad without mayonnaise

Ingredients for 6 servings:

  • 250 g pasta, e.g. fork spaghetti
  • 250 g cocktail tomatoes
  • 250 g Gouda, middle-aged
  • 125 g gherkins
  • 1 m.-sized onion(s)
  • 3 tbsp cucumber juice
  • 5 tbsp oil, e.g. olive oil or rapeseed oil or similar
  • some parsley
  • 1 garlic clove(s)
  • 1 tsp sweet paprika powder
  • salt and pepper
  • 1 tsp sugar
  • 1 dashes Tabasco
  • 1 tbsp butter or oil
  • some soy sauce

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Vegetarian

Cook the pasta in salted water according to the package instructions, drain well in a sieve and rinse with cold water. Sauté the onion in butter or oil with the sugar until translucent. Rinse the tomatoes and chop into small pieces, and cut the gherkins into small cubes. Cut the cheese into small cubes or grate it coarsely. Place the ingredients in a bowl with the pasta and mix well. For the sauce, put the oil in a small bowl. Crush the garlic and chop the parsley. Add the paprika, cucumber juice, soy sauce and Tabasco to the bowl. Stir well and season well with salt and pepper. Pour the dressing over the salad, mix again and let it sit for a while. Tastes good with grilled food, but can also be enjoyed on its own.
