Lamb's lettuce with pears

Ingredients for 2 servings:

  • 2 pear(s), ripe variety, approx. 300g
  • 2 tbsp lemon juice
  • 2 tbsp oil, walnut oil or neutral
  • some salt
  • 20 g sesame seeds
  • 20 g breadcrumbs
  • 1 egg yolk, whisked
  • 60 g lamb’s lettuce

Working time approx. 20 minutes; Total time approx. 20 minutes

a delicious winter classic with sesame egg crumbs

Peel and core the pears. Set aside 1/2 pear, cut into 8 wedges, for garnish. For the fruit dressing: Place the flesh of the 1 1/2 pears in a tall bowl along with the lemon juice and oil and puree using a food processor. Season with salt. For the sesame and egg crumbs: Mix the sesame seeds and breadcrumbs with the egg yolk and toast in a non-stick pan until golden brown. Wash and trim the lamb’s lettuce, drain well, and arrange on 2 plates. Toss the salad with a little fruit dressing. Add the sesame and egg crumbs and garnish with the pear slices. Add the remaining fruit dressing.
