Mix the green spelt with the granulated vegetable stock and 300 ml water. Bring to a boil over very low heat and let it swell for about 15 minutes, until all the liquid is absorbed. Let the grain evaporate in an uncovered pan. Peel and finely chop the onion. Stir the cream, eggs, onion, marjoram, and parsley into the swollen green spelt. Season the mixture with nutmeg, pepper, and salt and let it cool. Form the fairly moist dough into small cakes. Fry in batches on both sides in a little heated fat over medium heat until golden brown.
