Bruschetta with pepper and tomato paste

Ingredients for 2 servings:

  • 2 baguettes for baking
  • 1 sprig(s) tomato(s) (small vine tomatoes)
  • 1 red bell pepper(s)
  • 1 onion(s), red
  • 2 cloves garlic
  • 1 handful of basil
  • 1 pack of cream cheese
  • salt and pepper
  • some olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

First, slice the baguettes diagonally, place them on a baking sheet, and brush with olive oil. Toast at 180°C for about 15 minutes until browned. Meanwhile, roughly chop the tomatoes, half an onion, and a clove of garlic. Blend together with half a handful of basil, half a package of cream cheese, salt, pepper, and olive oil. Repeat with the bell pepper. Chop the bell pepper and fry briefly in a pan until softened. Blend the other half of the onion and a clove of garlic together with the remaining basil, cream cheese, salt, pepper, and olive oil. Spread both mixtures on the toasted bread and garnish with basil leaves, if desired. If you want it hot, return everything to the oven for a short time (3 minutes).
