Crostini with Four Formaggi

Ingredients for 12 servings:

  • 200g mozzarella
  • 100g Gorgonzola
  • 50 g Parmesan, grated
  • 50 g Pecorino, grated
  • 1 bunch basil, chopped
  • black pepper
  • 12 slices of white bread
  • 4 tsp olive oil
  • 1 tomato(s), dried, in oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 17 minutes

Preheat the oven to 230 degrees Celsius (450 degrees Fahrenheit). Drain the mozzarella and dice it very finely. Mash the Gorgonzola with a fork and mix with the mozzarella, Parmesan, Pecorino, and chopped basil. Season to taste with pepper. Spread on the bread slices, pressing down slightly if necessary, and drizzle with olive oil. Bake for 5-7 minutes. Meanwhile, slice the tomatoes, arrange them on the finished crostini, and serve.
