Fried lamb's lettuce with tomatoes and tofu

Ingredients for 4 servings:

  • 500 g lamb’s lettuce
  • 4 tomatoes
  • 200g tofu
  • some salt and pepper
  • 50 ml Balsamic vinegar (Crema di Balsamic vinegar)
  • some oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash the lamb’s lettuce and drain. Wash the tomatoes, remove the stems, and chop them finely. Dice the tofu and season with salt and pepper. Heat a little oil in a pan (preferably one with high sides). Add the tomatoes first, as they take the longest to cook. Then add the lamb’s lettuce and tofu. Toss in the pan over high heat for about 3-4 minutes until the lettuce collapses. Then arrange on plates or in a bowl and drizzle with the balsamic vinegar. Season with salt and pepper if desired.
