Paprika Ajvar Coconut Soup

Ingredients for 4 servings:

  • 1 jar of ajvar
  • 1 can coconut milk
  • 2 tbsp mustard, sweet
  • 1 tbsp chili powder
  • 150 g lentils
  • 1 tbsp black pepper
  • Salt, to taste
  • 1 tsp ginger, grated or finely chopped
  • ½ package shallot(s), finely chopped
  • 1 liter vegetable broth
  • 150 g lentils, red
  • 4 tbsp oil
  • 2 tbsp curry powder

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Soak the lentils for 1 hour, changing the water in between. Heat the oil in a pan, add the shallots, curry powder, chili, and ginger, fry briefly, and mix well. Add everything else and simmer for about 45 minutes until the lentils break down. Puree and bring back to a boil.
