Ingredients for 4 servings:
- 1 egg yolk
- 1 pack of puff pastry, round, fresh
- some oil
- 375 g mushrooms, finely chopped fresh
- 4 slices of ham, finely chopped
- 4 spring onions
- 15 g parsley, fresh or frozen
- 250 g cream cheese
- 4 eggs

Line the puff pastry in a 26 cm springform pan or quiche dish and brush with egg yolk. Fry the finely chopped mushrooms in a pan with oil. After 5 minutes, remove the pan and stir in the spring onions, ham, and parsley. Season with salt and freshly ground pepper. Beat the cream cheese and eggs for 5 minutes. Spread the mushroom mixture on the puff pastry and pour the egg mixture over it. Bake in the oven at 210°C for 25 minutes. Enjoy warm or cold.
