Kohlrabi cream soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 500 g kohlrabi
  • 1 tbsp butter
  • ½ tsp sugar
  • ½ liter vegetable broth
  • 250 g whipped cream
  • Salt and pepper from the mill
  • some lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the onion, wash and finely chop the kohlrabi. Heat the butter in a soup pot and sauté the onions. Add the kohlrabi pieces and fry briefly. Sprinkle the sugar over the soup and let it melt. Pour in the broth and let the soup simmer for about 15 minutes. Then remove from the heat and puree. Pour in the cream, bring the soup to a boil, and season with salt, pepper, and lemon juice.
