Cheesecake made from semolina and quark with mandarins

Ingredients for 1 servings:

  • 3 eggs, size L
  • 125 g margarine (low-fat margarine or Lätta with buttermilk)
  • 2 bags of vanilla sugar
  • ½ bag(s) of baking powder
  • 180 g sugar
  • 4 dashes sweetener (liquid sweetener), or amount to taste
  • 4 tbsp semolina, (soft wheat semolina) heaped tbsp
  • 1,000 g low-fat curd cheese
  • 2 small cans of mandarin oranges, without sugar, or alternatively other fruit without added sugar or raisins

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 30 minutes

light cake, without base

Preheat oven to 180 degrees Celsius (conventional oven without fan). Mix the first 7 ingredients. Then add the low-fat quark and mix well. Finally, carefully fold in the fruit and pour into a lightly greased springform pan (suitable for both a 28 cm and a 26 cm springform pan). Bake for approximately 70-75 minutes at 180 degrees Celsius on the middle rack. It also tastes delicious on its own (without fruit).
