Ingredients for 4 servings:

  • 4 apples
  • 50 g sugar
  • 500 ml apple juice
  • 1 vanilla pod(s)
  • e.g. cinnamon
  • 1 tsp cornstarch
  • 1 cl Calvados

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Core and dice the apples. Caramelize the sugar and deglaze with the juice. Add the cinnamon and vanilla bean pulp. Simmer. Boil the apple cubes in the liquid. Combine the cornstarch with the Calvados, stir into the boiling liquid, bring to a boil, and let cool. Tip: If you like, you can add star anise and allspice berries in addition to the cinnamon and vanilla. In this case, strain the sauce through a sieve after reducing the sauce.
