Light herring salad

Ingredients for 4 servings:

  • 300 g fish (matjes fillet)
  • 500 g yogurt, 1.5% fat
  • 2 apples, e.g. Jona Gold
  • 1 onion(s)
  • 1 tsp, heaped mustard, coarse
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Finely dice the onion, cut the apple into small strips, and cut the fillet into large pieces. Mix with the mustard and yogurt. Season with salt and pepper. It’s best to be a little more careful with the salt, as the herring will still be macerating. Let it marinate for at least an hour. This goes perfectly with boiled potatoes.
