Vegan vegetable burgers

Ingredients for 3 servings:

  • ½ can corn kernels, drained
  • 1 can chickpeas, drained
  • ½ pack of pine nuts
  • 2 carrots
  • salt and pepper
  • possibly breadcrumbs, vegan
  • 1 clove(s) garlic
  • 50 g sunflower seeds
  • some oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Patties with chickpeas and pine nuts

Chop the corn, chickpeas, and garlic in a blender or with an immersion blender. Peel and coarsely grate the carrots. Combine all ingredients and season with salt and pepper. If the batter is too wet, add some breadcrumbs. Form into small or large burgers as desired (not too thick). Then fry in a little oil over medium heat for about 4 minutes on each side until golden brown. Tastes great with mashed potatoes and salad, or in a burger bun.
