Ingredients for 3 servings:

  • 600 g mushrooms, halved or quartered
  • 2 tbsp oil
  • 1 cup crème fraîche with herbs
  • 2 egg yolks
  • 1 onion(s)
  • lemon juice
  • salt and pepper
  • 1 garlic clove(s), pressed

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat the oil in a wok or pan, add the mushrooms, and sizzle gently. Slice the onions into rings and fry until translucent. Meanwhile, separate two eggs and whisk the yolks with salt, pepper, garlic, and a squeeze or two of lemon juice. Stir the crème fraîche into the pan and add the egg yolk mixture. Stir until smooth. Season to taste and serve hot with a baguette.
