Ingredients for 2 servings:
- 2 m.-sized eggs
- 85 g Emmental cheese, grated
- some salt
- 125 g oyster mushrooms, not too large
- Margarine for frying

Crack the eggs and mix with the grated cheese. Then blend with an immersion blender and season with a little salt. Melt the fat in a pan. Clean the oyster mushrooms, trimming any thick stems, then dip them in the cheese and egg mixture with a fork and immediately add them to the pan. Fry on both sides over medium heat. Serve with a mixed salad and balsamic dressing.
