Colorful salad with radishes, feta cheese, walnuts and garden herb vinaigrette

Ingredients for 2 servings:

  • 50 ml olive oil
  • 2 tbsp vinegar
  • ½ bunch parsley
  • ½ bunch chives
  • 100 g radicchio
  • 1 chicory
  • 1 salad – heart
  • 150 g radishes
  • 1 handful of walnuts
  • ½ pack of feta cheese
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the chives and parsley. Combine the olive oil, vinegar, parsley, and chives in a jar with a screw-top lid. Season with salt and pepper and shake well. Wash the lettuce, place it in a bowl, and toss. Cut the feta cheese into small, irregular pieces (I prefer the natural look rather than the cubed look when eaten) and add them. Finely chop the walnuts, slice the radishes, and add both to the salad. Season with salt and pepper and toss with the vinaigrette.
