Fried green asparagus with potato wedges and onion sauce

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 5 potatoes
  • 1 radish
  • 75 ml soy milk (soy drink)
  • 3 garlic cloves
  • 1 onion(s)
  • ½ tsp vegetable stock powder
  • some lard, vegetable

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Peel the potatoes, halve them, and cut them into wedges. Wash the asparagus, trim off the woody ends, and cut them into pieces. Heat some vegetable lard in a large pan, add the potato wedges, and cook over medium heat until lightly browned on each side. Remove the potato wedges, add the asparagus pieces to the pan, and fry them as well (use a splash guard!). For the sauce, heat some vegetable lard in a saucepan, chop the onion and garlic, and sauté. Add the soy milk and vegetable stock powder and let it thicken. Garnish with radishes, if desired.
