Ingredients for 4 servings:
- 4 sweet potatoes
- 4 large potatoes
- 1 bell pepper(s)
- 1 onion(s)
- 1 cup of mascarpone (approx. 200 – 250 g)
- olive oil
- salt and pepper
- Spice mix (shashlik spice)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, peel and dice the potatoes and sweet potatoes. Then, clean and slice the bell pepper. Peel and dice the onion. Heat the olive oil in a pan and fry the potato pieces. Season with salt, pepper, and shish kebab seasoning. Remove the potatoes after frying. Fry the sweet potato cubes and bell pepper pieces in the same fat. Season with salt and pepper. Then, in a prepared baking dish, mix the potatoes with the sweet potatoes and bell pepper pieces. Pour the mascarpone over the top and spread evenly. Place the vegetable mixture in the oven at 150°C (top/bottom heat) for about 15 minutes. Perfect as a side dish to pan-fried dishes or as a vegetarian main course.
