vegan, low in sugar, for 50 pieces
Mix the flour, almonds, sugar, and ground vanilla in a bowl. Add the soft margarine and milk and knead all ingredients into a dough. Wrap the dough in cling film and chill for one hour. Preheat the oven to 180°C (top/bottom heat). Line a baking sheet with baking paper. Dust the work surface with a little flour. Take small portions of the dough and shape them into a roll. Cut equal pieces from the roll and form them into small croissants. Place the croissants on the baking sheet and bake in the preheated oven for about 10-12 minutes. Mix a little powdered sugar and ground vanilla (or vanilla sugar) in a shallow dish. While the croissants are still warm, carefully roll them in the powdered sugar mixture. Return to a wire rack and let cool. Store the vanilla croissants in a sealed metal or glass container. These vanilla crescents have a wonderfully aromatic vanilla flavor, and for me, this is the quickest and easiest recipe. The crescents can be shaped without crumbs, making them incredibly easy to prepare. Makes 50 servings.
