Ingredients for 4 servings:

  • 400 g spelt flour type 630
  • 95 g hemp flour
  • 40 g almonds, ground
  • 60 g flaxseed meal
  • 3 tbsp applesauce
  • 290 g margarine, room temperature
  • 190 g sugar
  • 2 packets of vanilla sugar
  • 2 pinches of baking powder
  • 1 pinch of salt
  • Flour for the work surface

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 18 minutes; Total time approx. 3 hours 18 minutes

with spelt and hemp flour

Beat the applesauce, sugar, vanilla sugar, and flaxseed with the margarine for about 10 minutes until fluffy. Then add the remaining ingredients a spoonful at a time while stirring slowly until a smooth dough forms. Shape the dough into a ball and refrigerate for 2 hours. Preheat the oven to 185°C (350°F). Roll out the dough on a well-floured surface and cut out the cookies into the desired shapes. Bake until golden brown and then let cool. Garnish with melted dark chocolate, if desired.
