Ingredients for 1 servings:
- 1 pack of bread mix (organic spelt bread mix)
- ½ cup crème fraîche with herbs
- 2 shallots
- 2 onions
- 2 spring onions
- 1 pinch of salt
- 1 pinch(s) of pepper
- ½ pack of grated cheese, approx. 50 g

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes
The healthy alternative to pizza and tarte flambée
Mix the spelt bread mix with water according to the instructions and knead into a dough. Then cover with a towel and let rest for about 1/2 hour. Meanwhile, peel the onions, shallots, and spring onions and slice them into rings. Pour hot water over them in a sieve if the onion flavor is too strong. Place the bread dough in hand-sized balls on a baking sheet and shape into a flatbread of the desired size with your hands. Just don’t make it too thin! Then spread a tablespoon of crème fraîche on each flatbread and spread it evenly. Arrange the onions, spring onions, and shallots on the flatbreads. Season with salt and pepper, and top each with a handful of cheese. Bake in the oven at approximately 180 degrees Celsius (convection oven) for 10-15 minutes. When the cheese is golden brown, the flatbread has the perfect consistency. It will be cooked through but still soft on the inside. If you prefer a crunchier texture, simply bake it a little longer. Alternatively, I’ve also added other ingredients to the flatbreads. For example, minced meat with tomatoes or tomatoes with feta cheese. You can top them with whatever you like, just like a pizza, only healthier. Of course, you can also use other baking mixes, such as whole-wheat, or simply make the dough yourself. My boyfriend and I are very enthusiastic about the baking mix, though.
