Coconut pancakes

Ingredients for 4 servings:

  • 400 ml coconut milk
  • 250 g flour
  • 3 eggs
  • 1 packet of vanilla sugar
  • 1 tsp honey
  • Fat for frying the pancakes

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the eggs, coconut milk, vanilla sugar, and honey. Sift the flour and stir in. Let the batter rest for about 10 minutes. As with traditional pancakes, pour a small ladleful of batter into a pan of hot oil, swirl the pan to spread it thinly, and cook until light brown on both sides. Serve with chocolate spread, fruit, or whipped cream, for example.
