  • 1 tsp, heaped lemon zest

Lemon sugar is easy and inexpensive to make yourself, as you can use leftover lemon peel. Always use certified organic quality! You can peel the peel from washed organic lemons using a vegetable peeler, a grater, a sharp knife, or a zester. Make sure you only remove the peel and not the white pith, otherwise it will be bitter. Scrape the peel before squeezing the lemons. Simply fill a container halfway with sugar, add the lemon peels, and cover with the remaining sugar. Shake or stir well. The top layer is just sugar. Seal tightly and let it steep for a few weeks until the aroma has spread. You can leave the peels in. Use just like any other lemon sugar, e.g., to flavor pastries, cakes, or drinks. If the lemon peel pieces are too large to eat, you can chop them up in a blender or sieve out the peels. If tightly closed, it will keep for a long time. The sugar may harden over time, but simply shake the container a little more vigorously, and it will become loose and pourable again. Tip: The amount of lemon peel varies.
