Ingredients for 2 servings:
- 6 eggs
- 1 tbsp flour
- 1 tbsp mineral water
- salt and pepper
- 6 cocktail tomatoes, sliced
- 10 olives, black, if possible without stones
- 150 g mountain cheese, grated
- 1 clove(s) garlic, to taste
- 1 pinch(s) oregano, fresh or dried
- Olive oil + butter, half and half for the pan
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Beat the eggs with the flour and season with salt and pepper. Heat the oil in a large, lidded pan and add the butter. Pour the batter into the pan and let it set for about 1 minute. Spread the tomato slices and olives on top, sprinkle with the cheese, and season with oregano and grated garlic. Bake with the lid closed and on the lowest heat for about 10 minutes. There are many different topping options. Side dish: tomatoes or leaf salad.
