Gratinated cheese and mushroom toasts

Ingredients for 8 servings:

  • 750 g mushrooms
  • 2 m.-sized onion(s)
  • 1 tbsp oil
  • 175 g Cheddar cheese
  • 175 g cheese (Gouda)
  • ¼ liter beer, light
  • 2 tbsp Worcestershire sauce
  • 2 tbsp butter
  • 2 tbsp mustard, hot
  • Cayenne pepper
  • 8 slices of white bread, approx. 250 g
  • Parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the mushrooms, wash if necessary, and slice them. Peel and dice the onions. Heat oil in a pan and fry the mushrooms until brisk. Briefly fry the onions. Season with salt and pepper. Coarsely grate the cheese. Heat the beer, Worcestershire sauce, butter, and mustard in a saucepan and melt the cheese, stirring constantly. Season with salt and cayenne pepper. Remove from the heat and continue stirring until the mixture thickens. Toast the bread and place it side by side on a baking sheet lined with parchment paper. Spread the mushrooms on top first, then the cheese mixture. Bake in a preheated oven at 250°C for about 5 minutes. Wash the parsley, pick it off, and cut it into strips. Remove the bread slices and cut them in half diagonally, then sprinkle with parsley.
