Tomato hummus

Ingredients for 1 servings:

  • 1 can chickpeas, 250 g
  • 2 chili peppers, e.g. piri-piri
  • 1 garlic clove(s)
  • 6 tomatoes, dried, preserved in oil
  • 3 tsp sesame paste
  • ¼ lemon(s), juice
  • pepper
  • Salt

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Hummus with a hint of sun-dried tomatoes

Drain the chickpeas, reserving the liquid. Place the chickpeas, sun-dried tomatoes, coarsely chopped chilies, and garlic clove in a blender, or in a bowl if using an immersion blender. Squeeze over the lemon juice. While blending, gradually add two parts of the sun-dried tomato oil and one part of the chickpea draining water until the hummus reaches a smooth consistency. Season with salt and pepper to taste.
