Ingredients for 4 servings:
- 1 gr. can/n chickpeas (800 – 850 g net weight)
- 4 tbsp sesame paste (tahini)
- 2 tsp lemon juice
- 1 tsp cumin
- 2 tsp paprika powder
- 4 medium-sized garlic cloves
- 1 pinch of salt
- 3 tbsp parsley, flat, chopped
- 2 tbsp olive oil
- some parsley, flat
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Oriental chickpea paste…a MUST for the oriental buffet…can be prepared
Set aside some chickpeas. Drain the chickpeas and reserve the liquid. Puree all ingredients, except the parsley and oil. Add a little of the reserved liquid a little at a time until a creamy consistency is reached. I need about 100 ml for this. Stir in the olive oil. Fold in the chopped parsley. Serve garnished with the whole chickpeas and some parsley. Serve with fresh pita bread.
