Ingredients for 2 servings:
- 2 m.-large zucchini
- 150 g feta cheese
- 2 handfuls of basil, roughly chopped
- 1 tbsp olive oil
- 2 tbsp pine nuts, roasted without fat
- 3 tomatoes, dried, pickled
- 8 olives, pitted, cut into cubes
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp mustard
- 2 garlic cloves, squeezed
- Pepper, from the mill
- Salt

Cut the tomatoes into very small cubes. Wash the zucchini, remove the stems, and slice thinly lengthwise. Cut the feta into thin slices as well. For the dressing, mix all the ingredients well. Fry the zucchini slices in a grill pan with a little olive oil (or directly on the grill) until tender, season with salt and pepper. Arrange the first half of the fried zucchini slices on two plates, top with the feta slices, diced tomatoes, diced olives, and basil, and cover with the second half, the still-hot zucchini slices. Sprinkle the pine nuts over the top and drizzle with the dressing. It tastes best served warm. Serve with a fresh baguette (not for SiSler in the evening, of course).
