Fried noodles with dried tomatoes and pine nuts

Ingredients for 2 servings:

  • 200g fusilli
  • 100 g tomatoes, dried in oil
  • 20 g pine nuts
  • basil
  • 40 g Parmesan
  • 8 tbsp oil from the tomatoes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the fusilli according to the package instructions. Toast the pine nuts in a dry, nonstick pan and set aside. Chop the sun-dried tomatoes. Reserve the tomato oil. Fry the pasta and tomatoes in the oil. Stir in the remaining ingredients and heat through.
