Fried noodles with vegan feta

Ingredients for 2 servings:

  • 180 g pasta
  • 2 garlic cloves
  • 150 g cheese substitute (Vegan Feta from Bedda)
  • 1 tsp sweet paprika powder
  • ½ tsp Timut pepper, freshly ground
  • Sea salt
  • 1 pointed pepper, red
  • 1 small zucchini
  • 1 onion(s)
  • 1 bunch of parsley
  • 10 olives (Kalamata)
  • 2 tomatoes
  • 1 olive oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the pasta according to the package directions and set aside. Cut the zucchini and bell pepper into thin strips. Peel and dice the garlic and onion. Wash and chop the parsley. Dice the feta. Quarter the tomatoes. Heat oil in a pan and fry the onions, bell peppers, and zucchini until hot. Add the sweet paprika and pepper. After 5 minutes, add the olives, garlic, feta, and tomatoes and continue frying. Stir occasionally. Add the pasta and parsley and mix well. Season with salt and fry for another 3 minutes. Season to taste and serve.
